No.20 Hakkoku
Sushi held with sincere desire to please many people is the best taste that attracts customers. A young sushi chef, Hiroyuki Sato, became independent and opened this restaurant in February 2018. Having entered the world of sushi at the age of 25 and gaining experience in a famous restaurant, Hiroyuki Sato wants his guests to be completely satisfied with the taste of sushi, so the course is only Edo-mae.
Tsukiji’s natural tuna and other high-quality seafood are carefully prepared, matured, and harmonized with the unique red vinegar fried rice. You will be able to enjoy a happy time full of hospitality from the beginning to the end.
From testimonials
If you want to enjoy sushi to your heart’s content, there is no doubt at Hakkoku! In Ginza, a fierce district of a well-known sushi restaurant, Hakkaku is very popular in its unique style of offering only sushi.
I think that there is no need to eat anything other than sushi at a sushi restaurant. Because I am looking forward to sushi very much, but it is a pity that I will be full by the time I eat sushi. So I welcome the style of Hakoku.
This room is also interesting. Three chefs, one in each of the six-seat three rooms. Rather than offering 30 sushi items in one course, I feels like it is being served 3 times for about 10 pieces. It’s like classical music with one song divided into 3 movements.
Shari is red vinegar, the acid is soft and the temperature is just right. Of course the size of the sushi was small because I could eat so much. So I was able to eat all 30 pieces. This is now my favorite sushi restaurant. I will be come back soon.

No.19 Sushi-sho Saito
The prestigious “Sushi-sho” who has developed the “work” of Edo-style sushi, which was born in an era without cold storage technology such as shime, pickling and ripening. While inheriting that sushi style, it is Mr. Saito, the owner of “Sushi-sho Saito,” who is particular about new and beautiful expressions.
Having entered the world of sushi from the age of 18, he has experience in New York, and the exquisite arrangements given to the material are created not only by knowledge but by his experience and sensitivity. Naturally, he has a strong commitment to the arrangement of material and seaweed.
His commitment is not only food. For example, he wants to dig out his shoes and spend time relaxing, so he has set up a dig at the counter. At Sushi-sho Saito, you can feel compassion for his honest and kind customers who say, “The sushi shop is not only a taste”.
From testimonials
Sushi-sho Saito is like a paradise for drinkers. There is a counter space of 11 seats, and Saito, the owner who trained at “Sushi-sho”, and his disciple make sushi.
The style in which sushi and food are provided alternately is the same as Sushi-sho. The sushi is beautiful and the cooking is ingenious, and we naturally enjoy eating and drinking.
At first we were a little careful, but with the kindness of the owner along the way, we could relax even our first visit and it was a good time. The recommended course for the owner was 25,000 yen, and two bottles of beer gave a total of 62,000 yen for two people.

No.18 Daisanharumisushi
Daisanharumisushi is a 7-minute walk from Shimbashi Station. There is a famous restaurant where sushi chefs come to study.
In the articles hand written by the shopkeeper every day, the fish and production area of the day are described to the type, size, production area and ripening days of the fish, and you can feel the depth of creation of the fish.
The “special sushi” for noon on weekdays is ¥ 5250. Owner’s recommend choice is ¥ 10000-.
From testimonials
Owner Nagayama is 74 years old born in 1942. He has been working for sushi for over 50 years and is active for life.
When I sit in front of the counter, a board written “Today’s fish production area” is prepared to each person. “I see, it’s easy to understand.” Of course there is an explanation for each, but I was able to understand speedily because of this. You can also ask questions to the owner.
I was visiting for the first time, so the owner gave a lecture on how to eat food.
According to the owner’s lecture, I added soy sauce to sushi in a soy sauce plate, transferred it to another plate, put it with wasabi and ate it. Wasabi was delicious.
Moreover, the smell and umami of seaweed were also wonderful.
Sake is only “Umenishiki”, and it is recommended that you have a hot spring.
The dishes were a lot of cooking utilizing ingredients, and all were delicious.
There was some sushi that I was concerned about the temperature difference, but I was almost satisfied. I enjoyed the unique sushi and food here.

No.17 Sushi Tokami
“Sushi Tokami” is a basement of a building in Ginza 8-chome, and is a restaurant set up like a hideout. It is Mr. Shota Oda who has been the second generation shop owner since April 2017 to make traditional Edo-style sushi. The protagonist here is tuna by all means.
The tuna is a natural product purchased from the long-established eel specialist wholesaler “Yamasachi”, and it is natural to use hand-rolled sushi for the head part of the head that has a rich taste, of course, or slowly squeeze the muscle from the tip for collagen soup And, you can fully enjoy the rich personality.
In addition, not only the freshness of the material, the characteristic shali is the essence of this store.
The large-grained Shari, which has a solid red vinegar flavor, reminds us of the philosophy of sushi that fresh ingredients alone can not make sushi.
The innovative Edo-style sushi that has been taken a half-step from the tradition-that is the sushi of “Yamasachi”.
From testimonials
I visited here again. The owner remembered my preference.
The dishes were smoked redfin tuna and liquor prawns with white prawns and snapper. And I ate a baked snapper.
The miso wasabi that was on the top of the shiitake mushroom next to the snapper was so delicious that I could drink a lot of alcohol.
Then I ate chopped Aoriika sushi, Haruko sushi, a Higashizawa sea urchin sashimi warship, and Hachijojima tuna sushi. They were all delicious.
I think that the comfort here where you can eat delicious sushi is the best in Ginza.

No.16 Ichikawa
“Sushi Ichikawa” moved from Setagaya to Shirokane Takanawa Station, and made a fresh start in Shintenchi. Because of its location and pricing, it may certainly not be a shop that can be visited by first-hand customers.
However, it is also the road chosen by the owner, Mr. Katsumi Ichikawa, who says,”I just want to stick to the taste”
Mr. Ichikawa who stands at the counter will never speak much. However, his feelings hidden there are represented by one piece of sushi served with Edo-style techniques over time, or one-piece dishes served with exquisite timing.
When you touch such a chef’s soul, you will know the value of visiting the store.
From testimonials
The sushi restaurant “Ichikawa” is located on the first floor of a quiet residential building just inside the main street. There is neither goodwill nor billboards. Only the door of simple white wood is a mark. At night, it is lit up with gentle colors.
The restaurant has a spacious white L-shaped counter with 11 seats available. It is a calm and enjoyable space.
I started with white fish sashimi, abalone. I was able to taste three kind of tuna. The squid was soft and I felt sweet. Tara Shirako had gloss and the solid shape looked like a cloud, and the taste was thick and creamy.
It is provided with vinegar rice in a small bowl.
Finally I ate an egg sushi for dessert. The eggs had a fluffy and smooth texture, and the sweetness was modest. All the sushi melts as I put it in the mouth and it merged nicely with the fish in the mouth. Shari’s vinegar is mild and does not interfere with the taste of the fish. All offered sushi were delicate and polite.
They were artistic and tasted delicious. I will visit here again to eat artistic and elegant sushi.
Today I went to the sushi restaurant Ichikawa, which my friend recommended. I have long known that Ichikawa sushi is very delicious, but I visited for the first time today.
It is already May, but the smell of tuna was strong and there was a lot of fat left.
The dish of snapper was very delicious. Along with the aroma of the leaves of yam, sweet snapper’s own taste came out clearly.
Aori ika squid and horse mackerel were also delicious.
As the owner carefully selected the ingredients, I felt that this restaurant was of very good quality overall.
